After a little hiatus the weeks during and after Harper’s birth, the “What I Ate this Week” post is back! I love sharing weekly snapshots of what I’m eating versus just daily snapshots, because I can showcase a wider variety of plant based meal ideas with you all (well, as varied as possible. I definitely get into phases where I eat the same foods again and again.)
We’ve been adjusting to life with a newborn this week and so far things are going pretty well. I do miss sleeping through the night, but I know this is just a season and soon Harper will be sleeping for longer chunks of time. Before Harper was born I prepared a bunch of meals to have on hand in the freezer, but we’ve barely dipped into them because Harper sleeps so much during the day, giving me plenty of time to make simple meals from food we already have on hand in the fridge.
I’m still obsessed with oatmeal and ate it everyday for breakfast this week in some form or another. Lunches contained lots of salads paired with carbs and dinners are often random leftovers thrown together to make quick meals. I love everything I eat and I hope these posts give you some plant based meal and recipe inspiration for your week ahead!
