My name’s Faith. I’m a married, 26-year old living with my husband in
NYC China! For the past four years of my life I had the privilege of traveling around the world for my job, but as of right now, my husband and I are trying to figure out our new life in a “small,” sunny city in China!
Oh, and learn Chinese.
When I’m not stumbling through Chinese in language class, running with my husband, stocking up on produce at the markets, or spending time with friends, you’ll probably find me at home experimenting in the kitchen. The funny thing is, I honestly used to hate cooking. When I was young I would always tell my mom that I would rather clean, weed the garden, or do dishes…basically anything other than cook. Man, have things changed! Starting in college and especially when Brett and I got married – and I actually had someone else to cook for – I discovered my love for cooking.
My love of exercise (and stomach pains after eating dairy) is what first caused me to care more about how I fuel my body. I want to eat consciously, feeding my body fresh, whole, and nutritious ingredients so that I can have the energy to accomplish my goals. These desire are what initially led me to study more about nutrition and eventually make the switch to a plant-based diet.
When Brett and I officially decided that we wanted to move to China, I knew that I would need to learn how to make a lot of foods from scratch, especially if I wanted to maintain a plant-based diet while living in a smaller city overseas. That’s when this blog was born. It started as a way for me to document my progress in the kitchen as I tried to improve my plant-based cooking skills and since then has become so much more!
Oh, and here’s a picture of Brett and I on our wedding day! He’s amazing and is willing to eat any vegan meal I cook him. He’s also been supportive through many a botched meal. What a stud.
