For those of you who have been following along on my blog, you know that I went through a 2-large-meals-a-day kick. At the time I loved it and it worked so well for my schedule and body. But right before we left for Vietnam, I started having some digestion issues which got me back into eating like a “normal” person, A.K.A. eating three meals a day with snacks if I need it. When I was eating larger meals, I loved not feeling hangry (so hungry that you get angry) and being able to go longer periods of time without thinking about food. I actually started to feel like I was loosing my metabolism and appetite, which wasn’t good! Now that I’m back to eating more meals throughout the day, I feel like metabolism is on fire and I love being hungry and reading to eat at each and every meal.
This day I ran 10 miles for my 1/2 marathon training. I thought it’d be a good day to show you what I ate!
This breakfast is a classic Faith meal. I love topping cold sweet potatoes with sliced banana, raisins, peanut butter and cinnamon. Such a good combination of carbs and healthy fats!
I ate lunch right after my 10 mile run. Before I started my run I whipped up some overnight protein oats by mixing together oats, chocolate protein powder, a mashed banana, cacao powder, chia seeds, ground flaxseed and soy milk. I let this mixture sit in the fridge while I ran and then topped it with warm berries, peanut butter and cacao nibs. It was the perfect post run meal and filled me up throughout my 3 hour Chinese language class.
After class I was feeling that post run “runger” and stopped by a bao zi shop and picked up one of my favorite bao zi (for $0.30 I might add) which is stuffed with shredded oyster mushrooms. Guys, the Chinese food here is AMAZING! I just love that when I don’t feel like cooking I can walk down the street and pick up a snack or meal for cheapo-dollars.
We rarely eat salads, but we had so much produce in our fridge that I decided to make Brett and I some fun salads with ALL the toppings for dinner. The base was romaine lettuce and we topped that off with tomato, carrot, chopped apple, sweet potato, pumpkin seeds, cucumber, pumpkin hummus and my favorite lemon tahini dressing. It felt so good to get lots of veggies into my system after such a carb heavy day.
