I feel like certain pregnancy “cravings” have come and gone every week of my pregnancy. Yet other foods I’ve consistently loved throughout my entire pregnancy.
I just entered my 4th month of pregnancy last Friday, so today I’m sharing with you a full day of eating and the foods I loved most during my 15th week (which will be bolded). Thankfully most of my meals were colorful and based around whole foods, with some goodies thrown in as well.
Multiple times this week I enjoyed my 4 Ingredient Chocolate Chia Seed Pudding for breakfast. I love that I don’t have to do much in the morning to prepare my breakfast except add in some fruit and other toppings. I’ve been loving mine with banana and cacao nibs.
Lunch Part 1:
Caesar Salads have been eaten almost everyday lately. I just can’t get enough of the creamy, salty cashew dressing and it’s a great way for me to get in some greens. This salad was probably the biggest salad I’ve had since getting pregnant. So much fiber! The base of the salad consisted of romaine lettuce, shredded carrot, chickpeas and the creamy dressing. Then I love to sprinkle on black pepper, nutritional yeast and hemp hearts.
Lunch Part 2:
On my way to class I scarfed down a piece of cornbread which I sliced in half, toasted and smeared with hummus. It’s such a savory, filling snack and I’ve been having cornbread almost everyday lately.
On my way to dinner with some friends I snacked on an apple. Then for dinner I had this tupperware of goodness which contained brown rice, homemade vegan meatballs, and veggies sauteed in homemade marinara sauce. I also added some extra sauce and nutritional yeast on top.
I was craving hot chocolate for the first time since getting pregnant, so I whipped some up by whisking together 1 tablespoon of cacao powder with 1 tablespoon of maple syrup and a small amount of hot water in a saucepan on the stove. I allowed that to start boiling before whisking in a cup of soy milk. Once it’s all warmed through you just pour it into a mug and enjoy! It hit the spot and surprisingly helped calm my bloated pregnancy belly. Yay for chocolate!
