Right before I started writing this post, I was actually having an awesome, deep conversation with one of my friends about food and body image. We talked about our family’s history with eating disorders and how we’ve changed in regards to these topics as well.
While I’ve never had a full blown eating disorder, I definitely had some disordered thoughts about food. I was scared to eat full fat foods. I went to bed hungry all the time cause I didn’t think it was “good or healthy” to eat right before bed. I would always feel so guilty after eating a more indulgent meal or dessert.
Gosh. I am not that person anymore.
And I’m pretty sure switching to a plant-based/vegan diet is what changed my attitude towards food.
I love food and I think it is a gift from God. It’s meant to be enjoyed and to nourish our bodies. But when we start being obsessive over calories (eating and burning) or feeling guilty after eating “bad” foods, that’s when food has changed from something good to something that controls our thoughts and actions.
I am just so thankful that I have a much healthier mindset towards food. Plants make me feel so good and I know that they are full of nutrients, so I’m not afraid to eat until I’m full and have a nice, big food baby. Plants give me energy and don’t leave me with stomach aches. If I don’t eat healthy food for a day, I know that all the nutrients I’ve eaten before and that I will eat afterwards will balance everything out. I don’t have to count calories or exercise excessively to maintain a healthy weight. I’m not constantly yo-yo dieting, trying the newest weight loss diet or pill. I love all the colors and textures that plants provide to my meals. I love how delicious they can taste without tons of condiments on top…but then how they transform into something spectacular when you do take the time to add seasonings.
Ah, they just get me so excited!
My desire is for everyone to feel food freedom and to eat the foods that make them feel amazing, inside and out. Oh, and of course I highly recommend trying a plant-based diet if you haven’t ever done so before:)
Today I’ll show you a typical day of food for me. It’s varied, colorful, and full of flavor…oh, and made entirely of plants:)

Oh, pancakes. I just love you! Especially when you’re made with only 2 ingredients and topped with frozen berries that have been heated up on the stove until they form a berry syrup. YES. In addition to berries, I also topped these 2 Ingredient Blender Pancakes off with almond butter, Homemade Chocolate Granola (recipe coming soon!) and ground flaxseed.
Homemade Kombucha. Nuff said.
Dinner was eating out of a tupperware container with friends. The base was a ton of lettuce and then I topped that off with edamame, celery, tomato, carrots, and cold Cold Vegan Mac & Cheese.
Strange but oh so good!
Right after eating this large portion I also had one of my Chocolate Tahini Brownie Bites for dessert!
And that’s everything I ate!
