Who even am I?! I’ve really gotten into this whole video making thing and this past week during my holiday break I ended up making another “What I Eat in a Day” video and even another Vlog, which I’ll be sharing with you all soon! I vlogged this time with my “real” camera so hopefully it will be better quality for you all.
Anyways, feel free to WATCH THE VIDEO or scroll down to just see some pictures. As I mention in the video, this was an amazing day of food–one where I LOVED everything I ate. I also felt like it was well balanced as it was full of all three major macronutrients plus lots of veggies. Oh, and some also fun treats too.
Breakfast was a fun change for me. It still contained oatmeal, but in a new form. I made a Single-Serve Oatmeal Pancake and topped it with banana, goji berries, cacao nibs and a peanut butter chocolate sauce. It was amazing and I ate it slowly while sipping on some black tea.
Usually lunch is my least favorite meal in the day, but today was different. I made Oh She Glow’s Crowd Pleasing Caesar Salad and it’s one of my new favorite meals! If you’ve never tried it before, I highly recommend it. It has crunchy chickpea croutons and this cashew/nutritional yeast topping sprinkled on top that just make the salad. So much crunch and texture that goes so perfectly with the creamy cashew dressing. Ah, I want some more now!! On the side I also had some cherry tomatoes and a slice of toasted Organic Rye Bread. So yum.
I ate “out” with friends at a Chinese restaurant, but I actually brought my own food to save my stomach from any issues. This was another amazing meal of roasted sweet potato, veggie rice, and a cold cucumber, carrot and tomato salad. Of course, I topped everything off with Sriracha, chili flakes and nutritional yeast. It was delicious! And yes I ate it cold.
