Three out of the four meals I ate yesterday contained chocolate.
And I’m not worried one bit about my health or weight!
I’m pretty sure chocolate is my favorite food and I’ve come to find lots of healthy ways to include it in my diet. If you too love chocolate, don’t think of it as a bad food that you can only eat on special occasions! I love to make chocolate flavored meals using cacao/cocoa powder and fruit as a sweetener. It’s the best way for me to eat all the chocolate I want without having to worry about my health.

Breakfast was a bunch of fruit (grapes and cantaloupe) along side of a hearty slice of my Dark Chocolate Black Tahini Banana Bread Muffin recipe that I made into bread. I made this batch using just bananas and maple syrup as the sweetener and added in cacao nibs for more chocolate and crunch. Its made with whole wheat flour, sweetened with fruit, super chocolatey and good for me!
If you know me well, then you know I like to have oatmeal in some form or another everyday. I’ve lately been obsessed with my Healthy Chocolate Baked Oatmeal and decided to have it for lunch. It too is sweetened with banana and I made my favorite Pumpkin Chocolate Mousse for the “frosting,” which I make by mixing my Homemade Pumpkin Puree with cacao powder. Then I doused it all in peanut sauce made with peanut flour! This meal contained no added sugar and even had veggies in it from all the pumpkin! I always finish this meal feeling satisfied and full of energy!
Dinner was a bunch of sautee zucchini, a Whole Wheat Corn Bread Muffin and my newest addiction, Black Bean Pressure Cooker Chili, which I topped with avocado and cilantro! I recently got a pressure cooker and have been loving experimenting with different recipes. Would you guys like for me to share some of them on the blog? Do you have pressure cookers?
Dessert was some homemade dried apple slices and an Almond Joy Brownie Bite made with almonds, coconut, cacao powder and dates. I’ll be sharing the full recipe soon, so get excited!
