Do you guys love the food you eat everyday? Or do you eat food because you feel like you have to, even if it doesn’t satisfy you? I feel like every time I write these “What I Eat in a Day” posts I think,”Gosh, I loved all this food!!”
I think loving what you eat is a good thing, but I know I haven’t always loved healthy foods and would just eat them cause I felt like I needed to. My taste buds have changed so much since I went Vegan. I can honestly say that I crave healthy foods. Give me all the fruit, veggies, whole grains, and natural healthy fats! I used to have such a sweet tooth (and don’t get me wrong, I still do!), but I wouldn’t feel satisfied until I had a rich dessert after dinner. Now I feel satisfied off of whole, healthy foods and rarely feel the need for a dessert after meals. If I do want something sweet, then it’s usually some fruit or one of my 5 Ingredient Adaptable Granola Bars.

Anyways, lets look at another day of food, shall we? I had actually fasted for 24 hours (both for spiritual and health reasons) before eating this food, so I was definitely ready to dive into my first meal!

Breakfast was Chocolate Zoats, which have been a common occurrence lately. I add shredded and minced zucchini to my oats along with ground flaxseed, chia seeds, cacao powder, cinnamon and a super ripe banana (I show how I made my oats in the video!) Then I topped it with a blob of natural peanut butter, some goji berries and cacao nibs.
Hit. The. Spot.
During the afternoon, I sipped on some of my Homemade Kombucha. YUM!
Dinner was my favorite meal this day. Falafel is one of my all time favorite foods and when you pair it with my favorite Oil-Free Basic Hummus, you’ve got one amazing meal. I made my Baked Turmeric Falafel and put it on a huge bed of lettuce and added tons of veggies, a chopped up apple, and my Oil-Free Basic Hummus. I’m in love with the sweet and savory combo from the apple and falafel. So so so good!
I still felt a little hungry after this massive bowl, so I also had some tea with soy milk and one of my 5 Ingredient Adaptable Granola Bars. THEN I was good to go.
