I’ve found some weird things in my produce since moving to china. One day I was washing lettuce and out popped a coin! But unfortunately the other day I found a not-so-nice present in my broccoli. I had steamed broccoli for dinner the night before and was getting the leftovers out to have for lunch. I pulled off what I thought was a leaf, only to realize minutes later that it was a massive grub! Apparently I had steamed and killed the grub the night before when I cooked the broccoli and had somehow eaten around it during dinner. I didn’t see it when I packed up the leftovers and by the next day it was cold and lifeless in the tupperware. It was disgusting, but I didn’t want to throw the broccoli away, so I ate it anyways.
But let’s stop talking about grubs and instead look at all the food I ate this day!
I yet again had chocolate oatmeal for breakfast, which I actually hadn’t had in quite a few days. I was extra hungry this morning so I added in a ripe banana and dolloped a generous serving of cashew butter on top…oh and cacao nibs too!
Lunch, other than the grub sighting, was perfection. I just sliced a perfectly baked sweet potato in half and plopped spoonfuls of hummus in the center. On the side I had the steamed broccoli and chickpeas which I topped with nutritional yeast and chili flakes.
Dinner was a fun, easy meal. We had deconstructed sushi plates complete with sushi rice, chopped veggies, dried tofu and sesame seeds. We topped everything off with tamari sauce and it was delicious!
Night Time Snack:
I’ve been waking up super hungry in the middle of the night (baby is going through a growth spurt for sure!), so I usually have a snack before bed to help me sleep through the night. I made a batch of my Gluten Free Double Chocolate Banana Bread, but this time omitted the chocolate chips. It’s basically chocolate baked oatmeal and is a super healthy filling snack. I had a slice of the bread with 1/2 of a banana and cacao nibs.
I still woke up hungry;)
