And we’re off…again!
Tomorrow Brett and I are heading to Hong Kong for the weekend and I’m pretty excited about it! A lot of our friends have been to Hong Kong and it sounds amazing. Expensive, but amazing. We’ll only be there 1 1/2 days, but we plan to eat a lot of American food, do some shopping (mostly for food items that I can’t get in China!), and walk everywhere. It’s a pretty typical traveling schedule for us, but I’m hoping it will be restful. This is the shortest trip we’ve taken out of country since we moved here and it’s so nice to only think through a couple days worth of clothes and snacks.
Of course, before we leave we wanted to eat up all the food in our fridge, so today I’m sharing with you the random, simple food I ate the day before we left.
Breakfast lately has been warm oats cooked with chia seeds, ground flaxseeds, shredded vegetables (carrots or zucchini) and cinnamon. Then I topped it with some of my favorite cashew butter from Trader joe’s. Ugly, but satisfying.
I wasn’t super hungry for lunch so I just ate some watermelon. It’s was super sweet, rehydrating and simple.
I had a Chinese friend over to hang out and I served some tea and random baked goods and fruit. I had some black tea and one of my favorite Vegan Pumpkin Chocolate Chip Biscotti. I seriously love this biscotti recipe and make them often. Check the recipe out if you haven’t already. They couldn’t be easier to make!
I also licked the bowl I used to make my 5 Ingredient Adaptable Granola Bars which I added cacao powder to and rolled into balls. SO GOOD! They’ll be the perfect travel snack for our trip to Hong Kong.
We mainly only had lettuce, cucumber and bread left in the fridge so I whipped up one of my favorite Refreshing Green Smoothies using the lettuce and cucumber and enjoyed it alongside of some toast. I completely forgot, but I literally drank this same green smoothie everyday for breakfast when we first moved here last August. It’s so sweet and satisfying and because of the veggies, it keeps me satisfied for a longer time than most fruit smoothies would.
