Brett and I have settled in nicely here in Nashville, only to start 3 weeks of travel on Friday! But our first full week in Nashville really has been so restful and refreshing. The fall leaves here in Nashville were the perfect welcome and we’ve been able to spend lots of time outside going on hikes, playing pickle ball and taking short jogs around the neighborhood. I forgot how much I love fall!
Brett and I are also so excited for this season in Nashville to go on dates where we can eat food other than Chinese food. On Monday we had our first prenatal appointment in the city and decided to go out for a lunch date beforehand. Brett kindly let me choose the restaurant and I of course chose a full vegan restaurant. Thankfully it did not disappoint and we both left so happy and full!
But let’s back up a bit and start with breakfast. Unfortunately some of these photos are pretty blurry. I just got a new iPhone and while sometimes the photos are amazing and crystal clear, other times everything is so blurry. Hopefully I’ll figure it out soon!
Breakfast was different than my usual oatmeal. I had two slices of toast, one of which was topped with almond butter and ground flaxseed and the other was topped with hummus, chili flakes and black pepper.
The restaurant I chose for our lunch date was called Avo and it’s a fully plant-based restaurant here in Nashville. I chose it mainly because I’ve been obsessed with salads lately and I saw they had a Kale Caesar Salad. Yes please! I ordered the full portion and it was massive. It was topped with cashew parmesan, tons of garlic, roasted chickpeas and tomatoes. It was tasty and left me feeling so good.
Brett ordered an amazing Walnut Burger and some Tomato Basil Soup, both of which I tried and were delicious.
My afternoon “snacks” were on the sweet side. For my glucose test I had to drink 2 containers of Grape Juice. I usually hate grate juice, but it wasn’t that bad!
After our doctors appointment I was already hungry and felt like I could handle some more sugar so enjoyed 1/2 of the vegan brownie that we ordered to-go from Avo. It was absolutely fantastic! I wasn’t sure what kind it would be, but the base seemed to be raw (made with nuts and dates) and the top was some kind of chocolate ganache. Yum!
For dinner I baked up a sweet potato and enjoyed with some hummus and the leftover kale salad from lunch. It was simple and filling.
I’ve also been enjoying a Dark Chocolate Covered Cherry from Trader Joe’s most evenings after dinner and this evening was no different.
