If you’ve read my recent What I Ate Wednesday posts, then you’d know that I’ve been on a two-large-meals-a-day kick. I’ve recently discovered intermittent fasting and have been occasionally practicing it, not by eating less in a day, but just by eating in a shorter window of time (usually from 12PM-8PM). I’m by no means strict about it, as you’ll see in this post, but most days it works for my lifestyle and body, so I just roll with it.
This day, however, contained way more than 2 meals and I felt like I was hungry/eating all day. I even ate two “desserts/treats,” which normally isn’t like me, but I didn’t worry about it and just ate in accordance to my hunger queues.
Yay for food freedom!

Breakfast was colorful and fruity as I ate 1 large mango and 2 juicy kiwis. I usually don’t crave just fruit, but for some reason I did this morning so I went all out! The mango was literally dripping juice as I cut it open. So good!
I sadly didn’t take a picture, but while at the markets I bought a plain steamed bun. I was expecting it to have more flavor, but it was pretty bland so I only at about 1/3 of it.
On the way back from the markets, I ran into some painters looking for work. We’ve been needing to paint our projector wall so I had the painters come back to our house to see whether they could do what we wanted or not. Once we clearly communicated what I wanted to have them do, they went back out to buy supplies. While they were out, I whipped up some Mint Watermelon Juice using my blender to serve them and enjoyed a glass of it as well. I’ll be sharing the recipe soon as it was so so good and refreshing!
I was CRAVING my Homemade Oatmeal Crackers for lunch, so I ended up making a simple form of Nachos using my Homemade Oatmeal Crackers as the base and a crumbled up veggie burger and black beans as the toppings. Then I added some Sriracha, Lemon Tahini Dressing and nutritional yeast. This may have been my favorite meal all day. I’m seriously obsessed with my Homemade Oatmeal Crackers. Definitely try them out if you haven’t!
For an afternoon snack, I had one of my newest obsessions: a Double Chocolate Black Tahini Banana Muffins with some black tea and soy milk. I LOVE this recipe and have made it 3 or 4 times since I developed it a couple weeks ago. They make for a fun, sweet breakfast or a decadent snack. So Yum!
Dinner was another amazing meal and it was made from random leftovers. We had salad, baked tofu, steamed broccoli, sweet potatoes, and rice which we topped off with my favorite Peanut Dipping Sauce. I usually use peanut flour to make my peanut sauces, but I didn’t have any so I used natural peanut butter. Man, this peanut sauce makes any food dipped in it taste amazing!
After dinner I had another sweet treat of one of my Vegan Coconut Oatmeal Cookies with yet another mug of black tea and soy milk.
I loved absolutely everything I ate this day. It was full of whole, colorful foods and delicious homemade treats. I’m so glad I can eat more than I’m used to and not worry about my weight. It’s so freeing to just roll with your hunger queues and enjoy all the food you eat!
