Well, this post is a little out of order, but I realized that I never showed you guys what I ate the day after we got back from our 10 day vacation in Vietnam. The last three days in Vietnam were basically spent eating and eating and eating, so my body was definitely ready for some home cooked food afterwards. After traveling and especially after lots of eating out I often crave simple, whole foods.
Let’s dive right in shall we?!
Oatmeal cooked with chia seeds and ground flaxseed and topped with a banana, frozen berries and almond butter. Simple and satisfying.
Lunch was a bunch of leftovers from the night before. The afternoon we got back to China from Vietnam I had enough energy to run to the market and make us dinner. I’m so glad I did too, because it made lunch the next day so easy. I had black rice, baked sweet potatoes, steamed pumpkin and green beans, chickpeas, nutritional yeast and Sriracha. You know, the usual rice, veggies and condiments!
Dinner was one of my favorite meals. Anything I top with my Low-Fat Peanut Sauce is perfection to me. We had brown rice, baked sweet potatoes, veggies and chickpeas topped with cilantro and lots and lots of peanut sauce. So amazing.
