It’s good to be sharing all of my favorite foods with you guys again. I feel like in my past few WIAW posts I’ve either been sick or had weird stomach issues and had to eat more bland, carb-y foods. All of which was delicious, but not ideal for me.
Today I’m sharing with you a full day of vibrant, hearty plant-based meals. Looking back over this day, I really did eat most of my favorite foods. Fresh fruit (esp. watermelon!), chocolate oatmeal, nut butter, rice bowls, smoothies, sweet potatoes and tofu. I could eat these meals for ever.

I was craving watermelon so bad during our time in Tokyo last week, so I knew I would dive into some as soon as I got back to China. There are watermelon trucks everywhere right now and they are the juiciest, sweetest things ever. I had half of a small one to start my day and it hit the spot.
My usual chocolate oatmeal was eaten a couple hours after the watermelon. I missed this simple meal so bad while we were in Tokyo and it was so good to eat it again. It always sits so well in my stomach and keeps me full for a while. I put homemade almond butter on top this time!
Lunch was a bunch of leftovers warmed up together on the stove. In this vibrant bowl was white and brown rice, edamame, cauliflower, carrot, zucchini and chinese mustard greens which turn everything they touch a beautiful bright pink. I doused this in buffalo sauce and loved every bite.
For a light and refreshing snack I had a smoothie made with 1 frozen banana, 1 cup frozen strawberries, 1-2 Tablespoons cocoa powder and soy milk and water to blend. I topped it off with cacao nibs which add the best crunch.
Another plate of deliciousness was for dinner containing so many of my favorite foods. I had a baked sweet potato, tamari seasoned tofu and an asian coleslaw salad that my friend made. Yum!
After dinner I snacked on some green grapes.
