I walk a lot. Living in China without a car means that I walk almost everywhere I need to go. Sometime I’ll ride my bike, but usually when I going to school, the market, Walmart, a coffee shop, etc., I prefer to walk. Some days I end up walking about 10 miles!
On top of that I love to workout at home, run, play team sports with the college students or go for the occasional long bike ride. Basically, my days are full of activity which needs lots of fueling!
This was another active day and I ate a good amount of food to fuel my body. It was all delicious too!
Breakfast was my Healthy Chocolate Baked Oatmeal which I made a few adjustments to. I used apple sauce instead of the pumpkin puree and added cinnamon instead of cacao powder. For “frosting” I just used some Homemade Applesauce and then topped it off with apples which I cooked in a saucepan with some cinnamon until soft. Such a healthy and hearty breakfast!
I actually don’t think I took a picture of my lunch, but it was really similar to this meal. I had Pressure Cooker Lentil Daal with rice, steamed broccoli, Sriracha and cilantro. It was warming and full of fiber to keep me full.
I’m still obsessed with making lattes in my Vitamix. The soy milk turns all frothy and I can use dates to sweeten them. This afternoon I made a Peppermint Mocha Latte with decaf coffee, soy milk, dates, cacao powder and a drop of peppermint essential oil. It was delicious!
A little while later before biking to the college by my house to play basketball with friends, I had one of my Vegan Lemon Blueberry Muffins drizzled with cashew butter.
Dinner was another current obsession: Salad! I made a Tamari Baked Tofu and roasted veggie salad with quinoa and Lemon Tahini Dressing. It was basically all of my favorite savory foods put together.
