Another wonderful vacation in Thailand is in the books! Brett and I got back from Thailand on Sunday and we couldn’t have asked for a better vacation. I have a more detail post on lots of Vegan Restaurants in Chiang Mai coming your way on Friday, but for now I’ll share with you a full day of meals during our time in Thailand.
I would say this day of meals was pretty typical for our first week in Chiang Mai, but everyday was different. Because I travel so much, and this trip was longer than our previous trips, I knew I wanted to eat most of my breakfasts in the hotel. Then, when eating out I usually chose simple, healthy options that left me feeling satisfied and light. If I eat rich, heavy meals three times a day when traveling, I start to feel poorly and don’t enjoy my vacation as much. I’ve definitely learned from experience!
Oh, but don’t get me wrong, I definitely ate my fair share of vegan brownies, ice cream, quesadillas, burgers, curries, etc. at different points throughout our three weeks of vacation. Thailand is a vegan’s paradise!
Breakfast was often oatmeal with chia seeds, which I brought from China, eaten in our hotel. I would pour some dry oats in a bowl and pour boiling water over them and allow them to soak until thick. I would then top the oatmeal with whatever fruit we had on hand. Breakfast was usually really simple, but it satisfied me and kept me going for hours.
During our first week in Chiang Mai I ate at a restaurant called Aum Vegetarian quite often, mainly because of their simple steamed options. Most days I would order purple rice, steamed veggies and the most amazing steamed sweet potatoes sprinkled with sesame seeks. It was a ton of food, but so nutritious and satisfying!
Whenever I’m in a tropical country with fresh young coconuts, I take advantage of it and usually buy one everyday. This day coconut water was my afternoon snack. I love this drink!
We ate dinner at a restaurant called Taste From Heaven which was fully vegetarian and mostly vegan. I yet again ordered purple rice and steamed vegetables, but also ordered some spring rolls with tofu and peanut dipping sauce. The other dishes in the photo below were Brett’s portions, which also tasted amazing!
