As you can see from my absence the past few days, I definitely don’t cook–and therefore share as many recipes with you all–when my husband is out of town. Brett has been gone for a good chunk of this month and his absence is making me remember how much I don’t like cooking for one person. When I’m home alone I gravitate towards simple meals which, to be honest, means breakfast a lot of the time. I’ve also been spending so much time with my girl friends having sleepovers, eating cereal for lunch, staying up late watching movies while eating chocolate and all that good stuff.
I’m excited to have Brett home soon so that I have someone to cook for and eat a more balanced diet, but today I’m sharing a typical day of food for me when I’m home alone. I’m actually impressed I ate something green this day!
I’m sorry, but I just can’t get over this simple breakfast. I used to think Brett was crazy for eating the same thing for breakfast day after day, but now I’m just like him with my Chocolate Oatmeal and nut butter. I just hits the spot.
I mentioned this on my Instagram the other day, but I’ve been feeling a little bit homesick for America lately. So I did what I’m sure any other expat would do and bought 5 different kinds of cereal off Taobao, just so I could feel like a semi-normal American. I’m so glad I did because it’s been such a fun treat to have every once in a while!
I’ve always been a cereal mixer and I don’t think I’ll ever change. For lunch this day I ate a mixture of Weetabix, Oatmeal Squares and Raisin Bran which I ate without milk and instead topped with fresh fruit and peanut flour sauce. Gosh I love cereal!
For dinner I had the most amazing Green Curry which I made using a green curry paste packet I found at the Walmart in our city. I’m so happy with how good the green curry sauce is because now we can eat a wider variety of curries in the future. I ate this Green Curry with white rice, salad and nutritional yeast and it was delicious.
I’ve been enjoying 90% dark chocolate most nights for dessert or a chopped up banana sprinkled with cacao powder. Yum!
