For the first 10 days of this month, I was home alone (tear drops). Brett and some of his friends went camping so I was left to my own devices when it came to my meals. In one sense, I absolutely love eating whatever I want when I want. I love eating simple, often sweeter meals, so without having to think about Brett’s cravings as well, I ended up eating a lot of fruit, smoothies, banana ice cream, oatmeal, and simple veggie and rice entrees. While it was delicious, it sure is nice to have Brett home! It was the longest I’ve ever been home alone and the first time being home alone since moving to China.
Thankfully I survived!
Today I’m showing you a full day of meals from my time alone. I will say, I didn’t eat as many veggies as normal in this day, but my-oh-my was it delicious! I loved everything I ate. I try to look at my nutrition on a week to week basis. If I don’t eat as many vegetables or hit all my nutrients in one day, as long as my week is varied and full of veggies then I’m a-okay with that!
Enough talking. Let’s check out the food!
Breakfast (part 1):
1/2 of a medium watermelon. The watermelons here are so sweet and delicious, so I’ve been having simple fruit meals fairly often. Yay for summer!
Breakfast (part 2):
I enjoyed some fresh out of the oven Chocolate Peanut Butter Oatmeal Scones with a friend while we talked and sipped on my favorite Dairy Free Indian Chai. Good conversations while drinking a warm beverage and enjoying a baked good are one of my favorite ways to spend my weekend mornings. I’ll be sharing the recipe for these scones on Friday so stay tuned!
For lunch I had a simple meal of toast. One piece was topped with mashed avocado, chili flakes and nutritional yeast. The other piece was topped with a cacao/peanut flour sauce and granola. Simple and satisfying.
To make up for my lack of vegetables throughout the day, dinner consisted of rice with shredded carrot, roasted broccoli, mushrooms, and red onion. Everything was then topped off with my favorite condiments: Sriracha and nutritional yeast.
For dessert I had some leftover Brownie Batter Vegan Protein Overnight Oats with a sliced banana and cacao nibs. Yum!
