Gosh, I just love all the food I eat! It’s colorful, nutritious, varied (I love experimenting) and it makes me feel so healthy and energetic. I’m actually going to miss all my home-cooked, simple meals while we’re in Vietnam this next week, even if I do get to eat all the Pho!
Let’s jump right into what I ate this day, cause I’m literally drooling as I write this post and reminisce on this amazing day of vegan, whole foods!
Most days I’m still eating two large meals a day with, usually, a dessert after dinner and a snack during the afternoon. It’s just working for me. For my first meal of the day I had two thick slices of my Homemade Whole Wheat Sandwich Bread smeared with peanut butter and my Homemade Fig Jam! I enjoyed this with a bunch of berries, a banana, and some figs. So yum!
I was still a little hungry after this meal so I had some black tea with soy milk and one of Deliciously Ella’s Cacao Almond Energy Bites, which are my newest obsession!
As per usual, I had about 16 oz. of my Homemade Kombucha. I love having a fun drink, other than water, to enjoy in the afternoons!
This meal contained so many of my favorite foods! I ate brown rice, sweet potatoes, roasted veggies (including lotus root!), Homemade Pumpkin Hummus, Homemade Sesame Crackers and Baked Tamari Tofu, all of which was topped with my favorite two ingredient Lemon Tahini Dressing (1 tablespoon tahini + juice of 1/2 lemon + water to thin).
For dessert I had another one of Deliciously Ella’s Cacao Almond Energy Bites. I told you I’m addicted!
