If you follow me on Instagram then you already know I’ve been living in a cabin in Orlando, Florida for the past week. Brett and I had some meetings to attend and some old friends to see in Orlando and we were blessed to be able to stay at a lake-side cabin during the week. It had everything we needed and even a little kitchen which allowed me to make simple meals when we didn’t want to eat out.
Today I’m sharing with you a typical day of travel meals for me. I had more time in our cabin this day while Brett attended some extra meetings, so breakfast food happened a lot, but thankfully we got out a couple of times throughout the day.
I’m hoping next week to start sharing “What I Eat in a Week” to give you guys a broader view of plant-based meals, but for today let’s look at some simple vegan travel meals!
Breakfast every morning contained the following ingredients in some form: oats, chia seeds, fruit and peanut butter. I just tried to come up with creative ways to cook/eat these ingredients. Today was pretty basic hot oats cooked with chia seeds and blueberries and topped with strawberries and peanut butter.
Since I didn’t have a car and Brett was in a lunch meeting, I had to get creative with my lunch and use all the breakfast ingredients to make something a little different. I’m actually surprised it worked! I mashed up a banana and added oats to it and used that mushy, mash as a pancake batter. I then heated up some chopped apples and blueberries for a warm, fruit “syrup” and drizzled everything with peanut butter.
There was a Starbucks right across the street from our cabin so we went there often to use their internet. I’m currently obsessed with iced decaf Americanos and enjoyed one outside with a peanut butter chocolate chip Lara Bar.
Later I also had some of these perfectly crisp baby carrots.
For dinner we went to Outback Steakhouse and I ordered my go-to steakhouse meal: a baked potato, steamed veggies and all the condiments, salt and pepper. This may seem like the lamest meal to order when eating out, but I crave it! And when you’re traveling and eating out so often, it’s nice to feel like you’re having a simple, home-cooked meal.
While watching a movie I had my current obsession: hot chocolate made with Trader Joe’s Sipping Chocolate and cashew milk. I love chocolate and when it’s warm and and in drinking form, I’m a happy girl! A little while later, I also ate a banana for a bedtime snack.
