Some days you end up with a fever and the runs all at the same time. (TMI I know.) Thankfully there are some pros to this unfortunate situation as it may force you to lay in bed all weekend long reading or binge watching your favorite TV show.
This is what happened to me this past Saturday and unfortunately my cold stuck with me through Tuesday. It was a long one, but I am so thankful for a flexible schedule and time to rest. I’m pretty sure I was coming down with something Friday night and I did the stupid, but fun, thing of going on a long run with my Chinese friend Saturday morning when I was already feeling sick and had the runs. The run ended up being fantastic. The weather was perfect and we were able to easily speak Chinese the entire 1 1/2 hours we were together. But once I got home from my run and sat down long enough to sense how I was feeling, my temperature was already rising and I felt exhausted. Cue 100+ degree fever!
Today I’ll share with you what I ate while lying in bed with a cold after a long run.
I haven’t added anything other than nut butter to my oatmeal in ages, but I knew I needed the extra calories to refuel after my run. So to my normal Chocolate Oatmeal I added a banana, brazil nut, coconut shreds and cacao nibs. It was delicious and kept me full for quite a while.
Whenever I have stomach problems I always crave this simple meal of rice, sweet potato and hummus. This time I also added some leftover cauliflower and homemade crackers on the side. I’m obsessed with buffalo sauce on cauliflower right now and this simple, carb-y meal felt pretty good on my upset stomach.
I’m pretty sure I had an afternoon snack of either an energy bite or some fruit, but I can’t remember. Just use your imagination!
Dinner was leftover Cozy Butternut, Sweet Potato and Red Lentil Stew from Oh She Glows. This soup is so so good! In addition to all the veggies and potatoes, the base is a mix of tomatoes and coconut milk so it’s rich and creamy. On the side I also had some unpictured baked tofu and a slice of toast with avocado smashed on top.
