I absolutely LOVE hosting people. I’ve always wanted my house to be a place where people felt they could stop by anytime or ask to spend the night if needed, knowing that they’d be well cared for. For me, hosting and feeding people go hand in hand. I can’t not serve people at least a snack or fun drink when they come over, but usually it’s a meal with dessert and drinks. If people are going to stay overnight, then I also always want to know what kind of food they like and what they normally eat for breakfast so that I can be prepared.
It’s just how I do, ya know?
BUT one thing I’m realizing recently is just how excited I get when people cook for me, especially when they take the time to make a fully vegan meal. It’s seriously my love language. I feel like the last couple times I’ve been cooked for, I can’t stop saying, “Ah, this is so great! Everything is delicious!”
I get easily excited over food and thoughtfulness.
Today I’m showing you a day of meals when my friend cooked a fully plant-based dinner for Brett and me. It was delicious, as was everything else I ate!
Breakfast has been so simple lately. I’ve just been craving basic oats with melted nut butter on top. This time I stirred in some Homemade Pumpkin Puree to my oats to make it extra creamy and to get in a serving of veggies. On top was a delicious blob of almond butter.
Lunch is usually leftovers that I bulk up with veggies and pre-baked sweet potatoes. This day I had some of my favorite Pumpkin & Red Lentil Soup, a baked sweet potato and steamed broccoli and spinach. So delicious and filling!
Like I said, dinner was at my friends house. She made an amazing Mexican feast complete with Mexican rice, black beans, sauteed veggies, salsa, homemade tortillas, homemade tortilla chips and enchilada sauce. It was so delicious and I definitely ate more than this plate’s worth.
I’m often nibbling and snacking on little things throughout the day, but otherwise this was mostly what I ate.
