This past weekend was crazy restful. Brett, some friends and I spent two nights in a nice hotel right outside our city just to rest and spend time together. We shared three suites and each room had a balcony overlooking our beautiful lake, a small kitchen, lots of seating and a large, spacious shower.
It was quite a treat.
Right outside the hotel is our huge, beautiful lake and there is a stunning bike path and boardwalk almost all the way around the lake so I went on two runs and and long walk over the course of the weekend. The fresh air and stunning scenery was so good for my soul.
We ate tons of delicious food as well…too much food actually. We indulged in two buffets, a Chinese feast, the best noodles of my life and quite a few Oreos (which are accidentally vegan if you didn’t already know!) I loved every bite, but as always I was pretty excited to get back to my nutrient dense, oil-free, homemade food. YUM!
Let’s look at what I ate the day after we got home, shall we? I’m still loving my two large meals a day (plus a mini-dessert) so that’s what I’ll be sharing with you all.
Chocolate Blueberry Oatmeal made with oats, shredded and minced zucchini, ground flaxseed, chia seeds, loads of blueberries, cacao powder, peanut butter and cacao nibs. So so satisfying!
Right before dinner I drank a full glass of my Homemade Kombucha and then Brett and I dug into this feast! First of all, do you see that brown cube in the upper left hand side of my plate?! That was a super fun discovery that I found at the market that morning: Smoked Tofu! I’ve had smoked tofu before and it’s super easy to find in all the markets here, but this tofu was super thick and chewy and smoked to perfection! We also had a side salad, roasted veggies and a chickpea and tomato curry that I made that morning. I topped everything off with my favorite chili spice and ketchup. It was perfection and filled me right up.
But I still had room for one of my Chocolate Pecan Prune Energy Bites, two dried figs and a mug of tea with a splash of Homemade Soy Milk.
That was all the nutrient dense food I ate after a weekend of indulging and it sure tasted amazing and made me feel amazing too.
