Don’t you hate it when you wait too long to eat food in your fridge and then it goes bad? Well that happened to me this day with some homemade jam I was hoping to swirl into my oatmeal. Sadly, I didn’t realize the jam had gone off until after I had already used it to beautifully decorate my oatmeal. Thankfully I was able to salvage my oatmeal and just scraped the jam off and added a banana instead.
But I’m getting ahead of myself…let’s look an my entire day of food, shall we?!
Like I mentioned above, breakfast was supposed to be the beautiful Fig Jam swirled Pumpkin Oatmeal below, but it ended up being Pumpkin Oatmeal with a banana on top. I’ve also been adding blueberries to everything ever since I found frozen ones at the Walmart in our city! Nut butter is also a must every time I have oatmeal and this day it was a nice dollop of Almond Butter!
The next day Brett and I were leaving for the weekend so we needed to eat up some random leftovers for dinner. I actually was pretty proud of what I came up with. I made some of our favorite Oil Free Baked Sweet Potato Fries and then made a simple bean dip by blending up a can of chickpeas, 1 avocado, the juice of 1 lemon, garlic powder and a large handful of cilantro. It was amazing and super filling!
For dessert, I had one of my 5 Ingredient Adaptable Energy Bites, some grapes and chocolate. Perfection!
