My husband is home! He was gone for about 8 days last week and is sadly leaving again in a few days, but we get to have 5 days together which is great. I’ll take it! Today I’m sharing with you what I ate on Sunday, which was Brett’s first full day back. I made us a special brunch, we went out to a coffee shop to read and I ended the day with a bit of a stomach ache, but it was still a great day none the less.
I woke up really early and knew I wouldn’t be able to wait until brunch to eat, so I ate my current obsession that I’m sure you’re used to seeing by now: Chocolate Oatmeal with nut butter. This breakfast looks sweet and decadent, but I don’t add any sugar and it’s full of healthy fats and protein to keep me full. I just love it so much!
For a special breakfast, I made another batch of my favorite Vegan Orange Chocolate Chip Scones which we enjoyed with sweet, juicy watermelon (our first of the summer) and a cup of black coffee. It was so nice to have a slow morning with a special treat to enjoy together.
For a late lunch or large snack, I had roasted lotus root and broccoli with some of my Homemade Whole Grain Sesame Crackers and some Okara (Soy Milk Pulp) Hummus. This hit the spot! But I’m realizing that lotus root is really fibrous and sometimes makes me bloated. So worth it.
For snacks throughout the afternoon I had a square of %90 dark chocolate and a banana.
My stomach was still in shambles by the end of the day so I knew I wanted something that digested well. Oatmeal again! I basically had the same thing I had for breakfast (oats cooked with chia seeds, ground flaxseeds, cocoa powder, cinnamon and water), except this time I topped it with cookie butter. Wow. That stuff is good and I completely forgot I had it!
