Brett and I have another couple and their sweet newborn staying at our house currently and it’s so fun to have their company. I’ve been cooking, cooking, cooking to keep food and snacks in the house lately and I’m loving having more people to cook for and serve. But, there is the occasional day when we have too many leftovers in the fridge or our friends have outings with friends over meals so I don’t need to cook.
This What I Ate Wednesday is full of quick and easy meals that I whipped up from leftovers or made the day before. I love days like these when I get to eat healthy with minimal effort.
Let’s look a what I ate!
I finally switched up my breakfast. But it’s still pretty similar to the hot Chocolate Oatmeal with nut butter I’ve been eating for the past month. Today I ate some Chocolate Overnight Oats which I made with quick oats, chia seeds, ground flaxseed, cocoa powder, a ripe mashed banana, soy milk and water. I didn’t really measure anything but it turned out perfectly!
Lunch came together in a flash. I just had to chop up some lettuce and heat up beans and rice on the stove. I topped my salad with pre-cooked lotus root, carrot and corn and used my favorite low-fat peanut sauce for a dressing. It hit the spot and the beans helped to keep me full for ages.
Dinner was another quick meal. I just had to drain and rinse a can of beans and reheat some veggies. We topped everything off with cracked black pepper and hummus. Hummus makes everything taste amazing, so even though this meal was so simple, it really satisfied us.
