All the meals I ate this day took about 10 minutes or less to prepare and tasted amazing! When it comes to cooking, I love to let my kitchen appliances do most of the work so that I can spend my time doing other things.

Breakfast required no cooking at all, just a little assembling. I placed two slices of my Double Chocolate Gluten-Free Banana Bread on a plate, added some chopped up banana and a blob of peanut butter and called it breakfast. I’ve been omitting the coconut sugar and chocolate chips from my banana bread recipe for a less-sweet version and it’s been perfect for breakfast!
Lunch took me 10 minutes to prepare and then my oven did the rest! I just chopped up some potatoes into wedges, coated them in spices and baked them in a 425 degree oven for about 30/40 minutes. I love using my silicone baking mat for easy clean up and it really makes the perfect fries!
With my fries I also had some lettuce (I love using the lettuce as a taco shell) and dipped everything in a Cheesy Tahini Dressing. So good!
While recipe testing, I enjoyed 1/2 of a Tahini Oatmeal Granola Bar. I love how hearty and not-too-sweet these bars are. Yum!
Dinner was another meal in which my kitchen appliances did most of the work. Brett actually helped me with dinner (he’s trying to learn some basic cooking skills before the baby comes!), so I made sure what we were eating would require minimal effort and would teach him how to use some of our kitchen appliances better.
We put some brown rice in our rice cooker to cook and while it was cooking prepared some broccoli and tofu. For the tofu we just chopped a firm block of tofu into cubs, coat it in soy sauce and bake it at 400 degrees for about 25-30 minutes, stirring half-way through. For the broccoli, we cut a couple heads of broccoli into florets and steamed them until bright green and soft. All the preparation for this meal took about 10 minutes! To give everything more flavor, I added more Cheesy Tahini Dressing and chili flakes on top. Other condiments that would be amazing with this meal are hot sauce, nutritional yeast, bbq sauce or my favorite peanut satay sauce!
This is honestly how I eat most days. You’d think a food blogger and food Instagramer would take more time to prepare her meals, but I’m all about quick, easy AND delicious!
