I’ve been eating so much delicious and healthy food lately! Not that much has changed from the way I normally eat, but I feel like my food has been extra delicious lately. As always I’ve been eating vegan meals, but lately my meals have been gluten free as well. Salads have been on the menu everyday and I’m feeling great because of them. Oatmeal as per usual is also a staple, but I’m hooked on banana sweetened chocolate oatmeal. Then for dinner I’ve been trying to buy a newer variety of vegetables to make for a colorful, satisfying plate.
Let’s look at a full day of meals!
Ah, this breakfast has happened three days in a row. Chocolate Zoats (oatmeal cooked with zucchini) which I sweeten with a frozen banana and top with peanut butter and cacao nibs.
To make this exact bowl I cook 1/2 cup of oatmeal, 1 teaspoon of chia seeds, 1 tablespoon of ground flaxseed, ~3/4 cup shredded and minced zucchini, 1 frozen banana, heaps of cinnamon and about 2 tablespoons of cacao powder in about 1 1/2 cups of water until thick and creamy. Then I pour it into a bowl and top it with peanut butter, cacao nibs and my daily brazil nut for selenium.
Lunch has been all kinds of salas lately. This day I had a fruity salad which I topped with some Cherry Vinegar that my Mother-in-law brought all the way from America to give me over Christmas.
To make this salad I chopped up a bunch of greens and topped them with shredded carrot, tomato, chopped strawberries, pineapple chunks, raisins, dried apple, chickpeas, pumpkin seeds and avocado. Then I drenched it in Cherry Vinegar!
Dinners have been simple, whole food meals with fun condiments. For this dinner I just roasted some sliced sweet potatoes and mushrooms while steaming some broccoli and purple cabbage. I added some turmeric to leftover rice and heated it up on the stove and then placed everything on a plate and topped it with Sriracha and hummus. Simple and satisfying!
