What are your staple foods? What foods do you always have in your house? What foods do you eat consistently throughout the week that make you happy? If you follow me on Instagram you could probably guess most of my staple foods because, as staple foods seem to do, they appear often in my day to day life.
And I’m in love with them!
This day was a perfect day to show you lots of my staple foods in action. Just because they’re my “staple foods” doesn’t mean that I only eat stick to theses certain foods, but today they were definitely in full force.
Let’s jump into the food shall we?!
Oh, and before I share my meals, I will remind you that I’m still on a two-large-meals-a-day-kick. I’m loving my large portions and extra free time. Enjoy!
Zoats topped with banana, frozen blueberries, cinnamon and dried fruit. To make this large bowl of goodness I cooked 1 cup of oats, 1 small zucchini (grated and minced), and 1 teaspoon of chia seeds in about 2 1/2 cups of water. Once the oats start to thicken I add in 1 tablespoon of ground flaxseed, cinnamon, and often cacao powder. Once thickened to my liking I poured the oats into a bowl (or two!) and added a sliced banana, frozen blueberries, almond butter, dried mulberries and cinnamon. So so so good and satisfying.
As you can see from this meal, some of my staple breakfast foods are oatmeal, zucchini, ground flax seed, chia seeds, banana, cinnamon, nut butter, and usually another kind of fruit. If I’m eating oatmeal for breakfast, you’ll usually find all of those ingredients present!
Dinner was amazing. I ended up being home alone for it, but I couldn’t stop “Mmm-ing”!! I started with a side salad made from a small head of romaine, cherry tomatoes, and some leftover roasted and chopped carrots.
For my main course I had brown rice, a baked sweet potato, baked tofu and lotus root, sautéed oyster mushrooms, steamed broccoli and picked veggies. I cooked the oyster mushrooms and marinated the tofu in Tamari sauce and topped everything off with cracked black pepper and Sriracha. OMG. This kind of meal is my favorite. The spice, the picked cabbage, the starches, the roasted veggies. MMMMmmm!!!
From this meal you can definitely see some staples in my diet. While I rarely show pictures of salad or lettuce on my blog or Instagram, I almost always try to eat a small head of greens everyday. Sometimes that means a green smoothie. Sometimes that means a salad. Sometimes that means a bowl of sautéed dark leafy spinach. Sometimes that means just gnawing on raw leaves while preparing my main meal. I find that raw lettuce or dark greens really help my digestions. (But can I just say that I’ve found TWO SPIDERS on my salads this week!!! China, why?!?!)
Some more staples that I eat almost everyday are rice, potatoes, roasted veggies (they’re always changing, but almost always roasted), black pepper and Sriracha.
Also, for drinks throughout the day I mainly stick to water and black tea, but sometimes I’ll have some of my Homemade Kombucha or a splash of soy milk in my tea.
