All of the meals I ate this day came together so quickly thanks to some meal prepping at the beginning of the week. I really don’t like cooking everyday, but I love having whole foods like baked sweet potatoes, brown rice, roasted veggies and a veggie entrees on hand in the fridge. Those foods are so easy to combine to make so many different, hearty meals.
I don’t show every single morsel I eat in a day, but I hope sharing my main meals gives you some inspiration for recipes/meals you can make throughout the week!
I love having sweet potatoes for breakfast. First of all, their sweet, but they also keep me full for a long time when I pair them with a fat source. I love topping my (cold) sweet potato with banana slices, nut butter, cacao nibs, ground flaxseed and raisins. And I always have one brazil nut a day for selenium!
Lunch wasn’t very colorful, but it was full of whole grains, protein and veggies. I just threw some pre-cooked brown rice and veggies into a pan with some chickpeas and reheated everything with a little bit of water to keep things from sticking to the pan. I then pour the mixture into a bowl and topped it with my favorite hummus, some black pepper and chili flakes.
I made a batch of my favorite Red Lentil Pumpkin Soup for us to enjoy throughout the week and served it with more brown rice and hummus for a hearty, satisfying meal.
