This day of meals definitely has a clear theme: Chocolate and greens.
Sounds ideal to me!
I’m officially in the 3rd trimester and Brett and I have been traveling non-stop it seems for the past little while, hence the lack of blogging. Last week we were in Northern Virginia spending an early thanksgiving with my siblings. Then we had one day in Nashville to do laundry and re-pack before making the drive to Destin, Florida where we’re at currently. We’re doing Thanksgiving #2 with Brett’s Dad’s side of the family and it should be a good time!
Today I’m sharing what I ate this past Monday while in Nashville. We had our first prenatal appointment and usually when we have to head downtown I like to check out a new restaurant. But because we had been traveling and eating on the road so much already, I decided to eat the bulk of my meals at home (aka Brett’s parents house.) Looking back you can definitely tell I love me some chocolate and greens!
Let’s dive into the meals:
Breakfast was my 4-Ingredient Chocolate Chia Pudding topped with almond butter, banana and cacao nibs. I love chocolate chia pudding, but for some reason the base of this pudding tasted a little like dirt. Could have something to do with using expired cocoa powder?! Anyways, the toppings made it taste good again!
I’m most hungry in the mornings so lunch happened right at 11 AM. I whipped up a quick salad with greens, apple, chili dried mango and balsamic vinegar and enjoyed some avocado toast on the side. Simple and delicious!
Because I ate lunch so early and we were out all afternoon for my prenatal appointment, lots of snacks happened. I had a Chocolate Builder Bar, an iced decaf coffee with a splash of soy milk and some (unpictured) pretzels.
Dinner was another ideal meal for me containing so many of my favorite foods. I had a perfectly baked sweet potato, some baked tempeh and a simple salad topped with my all-time favorite Lemon Tahini Dressing. This meal hit the spot!
Most nights I’ve been enjoying a square of dark chocolate or a chocolate covered cherry from Trader Joe’s. Yum!
