So I’ve recently made a change in the way I eat that goes against everything I’ve ever believed. Instead of eating breakfast as soon as I wake up and trying to get in three square meals a day (plus some snacks), I’ve recently started eating 2 large meals. I’ve always been the person who loves to eat a large volume of food at each meals, so getting to eat two massive meals is so fun satisfying. I also can be easily distracted by food (having a food blog may have something to do with that), so keeping myself out of the kitchen for one meal has really helped my productivity.
Lately, I’ve been eating around people’s usual lunch and dinner times and this really works with my schedule. I’ll get home from my morning Chinese class and tuck into a hug breakfast (even though it’s noon, I still call it breakfast cause I’m breaking the fast!). Then around 7 hours later, Brett and I will eat dinner together. In between meals I don’t feel hungry at all and just hydrate with water or tea. It’s great!
Today I thought I’d show you what a typical day of food currently looks like for me.
Chocolate Zoats made with lots of oats, chia seeds, ground flaxseeds, shredded zucchini, cacao powder, ripe banana, and nut butter.
Dinner is usually saturated with leafy greens, beans and whole grains. This day I made a large, wanna-be deconstructed sushi bowl (without the nori and the wasabi cause I forgot!) and it had a base of romaine, tomato and cucumber salad. Then I topped with with cooked quinoa, chickpeas, shredded carrot, more cucumber, bell pepper, nutritional yeast, Sriracha and a little soy sauce. Mix all together this was such a delicious and satisfying meal.
After dinner I’ll sometimes have a “dessert” of some fruit or a chocolate energy bite, but this night I actually had a more decadent dessert of homemade hot cocoa with vegan marshmallows while a friend and I watched a movie. What a fun treat to end the night!
