I might turn orange pretty soon with the amount of pumpkin I’ve been consuming the past few weeks. As soon as we had few days of colder weather, I quickly made a batch of my Homemade Pumpkin Puree and have been using it in everything! Eating homemade pumpkin recipes has also been getting me super pumped to be in American this fall. Colorful leaves, crisp weather, pumpkin spice lattes…yes!

I’m officially back to loving everything oatmeal after a little hiatus during the first few months of my pregnancy. I whipped up a Single Serve Vegan Pumpkin Pancake the other day and have been loving it topped with banana, peanut butter and granola!
You guys have seen this soup before, but I just can’t get enough of it! For lunch I had one of my favorite meals of Red Lentil Pumpkin Soup topped with nutritional yeast and chili flakes and a slice of avocado toast topped with more nooch and chili flakes, as well as salt and pepper. This meal never gets old.
After a workout I decided to try making a frosty-like smoothie and it actually turned out really good! I’ll be sharing the recipe soon, but basically it’s a mixture of ice, frozen banana, nut butter, cocoa powder and dates. The texture was perfect and it was a fun, sweet treat!
Dinner was yet another pumpkin recipe. I made some Pumpkin Chickpea Coconut Curry and we enjoyed it with brown rice, more nutritional yeast (are you shocked?) and chili flakes. You can probably tell what some of my favorite condiments are!
