Winter is officially here in China which means I’m eating all the warming, comforting foods! But these meals also are healthy and made with whole foods…score!
Let’s jump right into it!
I almost always will choose chocolate over fruit, but lately I’ve been loving lots of different fruits in and on top of my oatmeal. For breakfast on Monday I made my basic base of oatmeal (oatmeal, ground flaxseed, chia seeds and cinnamon cooked in water). I topped it with banana, apple sauce, strawberries, cacao nibs and my daily brazil nut for selenium. Yum!
Lunch was a bunch of leftovers warmed up, dumped on top of lettuce and topped with my favorite Low-Fat Asian Peanut Sauce. I had brown rice, chickpeas, sweet potato, carrot, cauliflower and lots of lettuce. The Asian Peanut Sauce makes everything taste amazing so definitely give it a try!
Dinner was also leftovers, but delicious leftovers. On Sunday I made a batch of my Vegan Pressure Cooker Black Bean Chili and it’s one of my new favorite recipes. It’s so easy to make and makes a large amount so we can have leftovers for ages. I ate a large bowl of Chili with 2 small slices of my Homemade Whole Wheat Bread.
After dinner I also had two kinds of fruit: pomelo and dragon eyes (Longan Berries). It was a sweet and healthy way to end the day!
