Today is a suuuuuper exciting day…
I’m moving to China!!!
By the time you read this post, Brett and I will most likely have started our 40 hour journey over to China. We’ve been preparing for this move for over a year (even longer for Brett!) and D-day has finally arrived. We are so excited, but also facing mixed emotions as we say goodbye to our closest family and friends. A lot of tears have been shed in the past three weeks as the weight of saying goodbye hits us all at different times. However, amidst all of those tears, the past three weeks spent in Nashville at Brett’s parent’s house have been beyond amazing and I’m feeling so refreshed going into this move. We had so much quality time with friends and family and we’re both feeling so loved and supported as we head into this new phase of our lives!
I’m also thrilled to have this blog so I can continue to share recipes and stories of our new life in China with you all! Thank you so much for all of your kind and supportive words as I’ve been preparing for and sharing about this move. Recipe-wise, I know we won’t have all the food available to us in China like we do here in America, but I’m excited for the challenge and for more opportunities to be creative with what ingredients I will have. I may even try my hand at some gardening!
I’ve got a lot of recipes from my time in the states still yet to share with you all and they’re all delicious! I’ll be posting those recipes in the coming weeks as Brett and I search for an apartment and get settled into our new place. Once things quiet down and I’ve figured out where to buy groceries, I’ll be back at experimenting again…and this time with a new kitchen gadget: a Vitamix!
On a completely different note, I have another exciting thing that’s happening today: I’m guest posting on Tina Muir’s blog! To be honest, I’m not sure how I stumbled across Tina’s blog, but I’m so glad I did! Tina is an elite runner and is amazing at her sport. I’ve had such a great time following along on her journey and learning more about what life as an elite runner looks like. Tina is so real and raw on her blog and I find that so refreshing. She not only shares the ups and downs of her training runs and races, but she also shares about her personal life too. I’ve loved getting to hear about the details of her wedding planning, and of course, as a plant-based foodie, I’ve loved participating in her Meatless Monday link-ups!
