This week has had lots of emotional ups and downs. Somedays seems to fly by and I don’t have a care in the world. Other days drag by and I find myself feeling more sad and down than usual. On the days I’m feeling down, I eventually realize it’s because I really just want to be in China…where our house is…where our friends are…where I can use the Chinese I studied for two long years.
BUT I can’t be in China right now. Right now we need to be in America and we will need to stay in America for a few more months. And that’s okay. I need to let myself grieve that I’m not in China, but I also want to choose to be joyful. I have so much to be thankful for, including access to and money to buy a wide variety of food. It’s so easy to take food for granted!
I heard a quote yesterday that sums up well how I view food: “View food as friends. Some friends you want to spend more time with than others.” So while I’m all about sweets and treats and enjoying processed foods occasionally, I have found that when I eat more whole foods I feel the best. Specifically whole foods like oatmeal, sweet potatoes, fruits, veggies and nut butter! That’s why these foods pop up so much in these weekly meal posts. They are straight from the earth and make me feel so good.
