Hello and happy hump day from Chiang Mai, Thailand! It’s been a pretty uneventful week here on our end. I had my first counseling session on Monday and that went really well. I’m excited to go back weekly and learn more about myself and grow in the process.
Today I’ve got a fairly typical day of vegan meals and snacks to share with you all. I also randomly decided to put my camera on video mode and make a short “vlog” for you all. I love seeing internet “friends” on video because it allows me to get to know them better by hearing the way they talk and seeing their mannerisms. Hopefully you’ll feel like you know me better after watching this video too! While I wish I was a professional videographer who made epic videos, I know that simply starting is the best way to grow in a skill. I was a horrible food photographer in the beginning, but have come a long way simply through lots of time and practice. I hope that’s the case for my videos as well.
Anyways, let’s check out what I ate this day! I completely forgot to photograph my dinner, but you can check out the video to see it in visual form.
Harper has been waking up a lot earlier than usual lately due to some intense teething. That means I’ve been enjoying cold, easy-to-put-together breakfasts. I’ve been loving muesli soaked in almond milk and topped with homemade coconut yogurt, strawberry compote, fruit and fun crunchy toppings like coconut flakes and pumpkin seeds. For lunch I sautéed some cabbage and paired it with leftovers which I had meal prepped earlier in the week: a baked Japanese sweet potato, Baked Turmeric Falafel and some lemon tahini dressing. So many of my favorite foods on one plate!
I’m a nibbler. That paired with being a food blogger means I often have random bites of food throughout the day. I don’t document them all, but know that I enjoyed some chocolate quinoa granola throughout the afternoon (recipe coming Friday!). I also took Harper to an outdoor playground and ordered an iced coffee with coconut milk to enjoy while she played.
For dinner, we walked to a nearby food court/outdoor market which we eat at often. We all split a cold coconut and for my main course I got some green tofu curry over rice. I forgot to photograph the curry so be sure to watch the video to see what it looked like! Both Brett and my entrees along with the coconut water came to under $4!
For a little dessert I had some dark chocolate with tea to end the night. Some other un-pictured things I consumed were a brazil nut, gummy vitamins and copious amounts of tea and almond milk!
