Let’s be honest. I love me some gluten. My homemade whole wheat bread smeared with mashed avocado or cashew butter is one of my favorite foods. I’m so thankful that I can digest gluten and I hope I can continue to do so for a long time. Considering I’ve already chosen to eat a vegan diet, not being able to digest gluten would make my diet even more restrictive and I don’t want that (even though I feel like I eat in abundance!)
But while I have nothing against gluten, I do find myself eating completely gluten-free most days of the week. I don’t plan it, but when you eat oatmeal most mornings for breakfast and live in the land of white rice, it’s pretty easy to eat gluten-free.
I thought I share with you guys an accidentally gluten-free day of plant-based meals:
Pumpkin Oatmeal has reentered my life and I’m so happy about it. In a sauce pan, I just cook 1/2 cup oats, 1 teaspoon chia seeds, 1 tablespoon ground flaxseed, 1/2 mashed banana, nutmeg and cinnamon in about 1 – 1 1/2 cups of water until thickened. Then I stir in 1/2 cup pumpkin puree and allow everything to warm through before pouring it into a bowl. I top everything off with more banana, cashew butter and granola and dig in!
If you follow me on Instagram then you’ll already know how obsessed I am with chayote greens. I cook a whole bunch in a little coconut oil until soft and buttery. Then for seasoning, I add garlic salt and chili flakes. They are so rich and delicious and I could eat a whole wok full easily. In addition to these greens, I’ve also been obsessed with bbq chickpeas (literally chickpeas mixed with bbq sauce) and sweet potatoes. This meal is so satisfying! (If your celiac or really intolerant to gluten, you’d want to make sure your bbq sauce is gluten-free!)
Another current obsession of my are rice/veggie/tofu bowls topped with all the condiments. I’m currently loving the combination of nutritional yeast, avocado, chili flakes and hot sauce. It’s so good!
