I’ve always preferred large, hearty meals that keep me full for hours. I’ve even gone through seasons of only eating 2 massive meals a day. I guess I really enjoy feeling completely full and satisfied and, while I love cooking, I don’t like spending a lot of time in the kitchen. I’m all about meal prepping and making use of leftovers.
But since I’m coming up on the end of my 2nd Trimester, I’m finding that I need to adjust my eating habits in order to eat enough while not feeling too uncomfortable. My usual, pre-pregnancy portions have become too large for me to eat in one sitting, so I’m eating smaller portions and including a few snacks throughout the day.
Today I’m sharing with you a full day of Pregnancy Meals and talking about what I did differently to change my portion sizes.
Instead of my usually whole portion of my 2 Ingredient Blender Pancakes, I made a 2/3 portion and it was perfect. For toppings I warmed up frozen blueberries and allowed them to cook down and heat through until a thick syrup formed. I also used peanut flour to make a sauce and topped everything off with some Homemade Granola.
I’m always starving for lunch around 10:30/11 AM and ended up whipping up this super simple lunch. We didn’t have much in our fridge and I didn’t want to take the time to cook. I ate half of a large sweet potato and topped it with Homemade Hummus, nutritional yeast and pumpkin seeds. In the past I would have eaten the entire potato, but since I’ve started closing in on the 3rd Trimester, 1/2 of the potato was the perfect portion for my shrinking stomach.
Dinner was another easy meal, but thankfully I was able to get in some greens and protein. I ate the other half of the sweet potato from lunch and then just baked some tofu and sauteed some Chayote Greens in a little coconut oil. I could eat this meal everyday right now, especially when I douse everything in hot sauce!
Afternoon and Evening Snacks:
Because my meals are a little smaller than normal, I do find myself needing a snack a couple times throughout the day. Some of my current favorite snacks are:
- Warm Cinnamon Apples (I chop up an apple and cook it in a little water and cinnamon on the stove until soft and warm)
- Banana smoothies
- Fun Drinks (my Homemade Chai Tea, Hot Chocolate, Boba Tea, coffee with cashews blended in, etc.)
- Dark Chocolate (usually just a square in the afternoon or after dinner)
