How do you all feel about these What I Eat Wednesday posts? I kinda like them. It’s a fun way for me to share with you all what I really eat in a day and it gives me a break from having to post a recipe. Not that I’m burnt out from sharing recipes, but some weeks I’m not able to experiment in the kitchen as much as I’d like to and Brett and I end up living off portobello mushroom burgers and sweet potato fries. I’m pretty sure you all aren’t looking for how to sauté a mushroom or roast sweet potatoes…or maybe you are! Let me know your thoughts!
These meals are all from last Wednesday and are pretty typical Faith foods (a.k.a. lots of fruits, veggies, and homemade snacks). The pictures are all taken with my iPhone so they aren’t the greatest quality, but you get the idea:)
Banana Mango Ice Cream with mango and shredded coconut. Usually I like to make green smoothies or green banana ice cream, but we were out of the greens I usually freeze and use in the mornings. I think by freezing my greens, the “green” flavor isn’t as potent in my smoothies. This day, however, was simple, fruity, and delicious!
A serving bowl sized salad with all the fixings…which unfortunately are hard to see due to ample amounts of lettuce. In this bowl was 1 head of romaine, shredded carrot, steamed broccoli, cauliflower and carrots, 1 large tomato, 1/2 yellow bell pepper, 1/2 avocado, and lemon juice and tahini as dressing. Anything mixed with lemon and tahini is my favorite. Oh and avocado. Always avocado!
Brett and I tried for the 3rd time to win lottery tickets to see Aladdin on Broadway and for the 3rd time we didn’t have our names called! Oh well. One day it will happen! During our subway ride to and from Times Square, and while waiting for the lottery to take place, I ate the smallest apple known to man and one of my Easy Homemade Oatmeal Date Granola Bars. We’re loving those bars and take them with us everywhere.
Once we got home I snacked on some pineapple while I made dinner.
Dinner was another “make-something-happen” kind of meal. In this bowl of deliciousness was some brown rice, chickpea and tomato curry, sautéed zucchini, fresh tomato and cilantro and nutritional yeast. It hit the spot!
