I’ve found that on the weekends I eat more intuitively and for enjoyment. Not that I don’t love all the food I eat throughout the week, but I care less about eating vegetables on the weekend and listen to my body more. That usually means I drink more coffee (thank you very much late night movie nights) and eat more cereal, toast and oatmeal. Carbs anyone?
It all balances out right?
Well this past Saturday was a good example of just that kind of eating, and oatmeal was the star of the show!
I didn’t take a picture of my breakfast oatmeal cause it was so dark, but it looked a lot like the oatmeal pictured below, just without the cacao nibs and Brazil nut. I made my basic oatmeal (oats + ground flaxseed + chia seeds + water) and added cocoa powder to it and topped it with peanut butter. Lately I’ve been loving simple oatmeal without all the toppings. It makes the one topping (nut butter) more special!
I couldn’t stop thinking of oatmeal, so I just listened to my body and had another bowl alongside some coffee. This time I added a small chopped apple and Homemade Pumpkin Puree to my basic oatmeal and yet again topped it with nut butter. Almond butter to be precise!
After a run and some weight lifting I had a small smoothie of 1/2 banana, blueberries, frozen spinach and water.
Then I did some recipe testing and had a couple bites of these Vegan Double Chocolate Coconut Cookies which will be coming your way soon. I also had a square of 90% dark chocolate.
Dinner was eaten out of a tupperware with some friends. I had a base of lettuce, roasted cauliflower, black beans and a perfectly baked sweet potato all topped with buffalo sauce.
I yet again stayed up too late which meant I got hungry again. While watching a movie with Brett and a friend I had some popcorn, which I’ve discovered I can make without oil on the stove! Then after the movie before bed I had a mug of cereal which was a mix of my favorite Family Size Basic Vegan Granola, another kind of oil-free granola, rice puffs and corn flakes. I filled me up and allowed me to sleep so well.
