Cilantro Lime Hummus Recipe

Ingredients

  • 15 ounces chickpeas or about 2 cups cooked
  • 1 bunch cilantro leaves only
  • ¼ cup freshly squeezed lime juice
  • 2 cloves garlic smashed and roughly chopped
  • ¼ teaspoon salt
  • ½ jalapeño deseeded (optional)
  • 1-2 tablespoons water if necessary

Instructions

  • Add all ingredients together in a food processor
  • Blend together at high speed until smooth, adding 1-2 tablespoons water if necessary.

Notes

*If you are using a food processor, I've found that my hummus is smoother if I process the cilantro leaves and lime juice first to help break down the cilantro. Then I add in the remaining ingredients and process until smooth.
