Oil-Free Edamame Hummus

Cilantro and cumin pair beautifully with whipped lemon juice, tahini and edamame beans to create this creamy and light Oil-Free Edamame Hummus.

Ingredients

  • ¼ cup tahini
  • ¼ cup lemon juice
  • 1 ½ cup edamame beans cooked
  • ½ cup tightly packed cilantro
  • 3 cloves garlic coarsely chopped
  • ¾ teaspoon salt
  • ¾ cumin
  • pinch cayenne
  • ½ cup water to blend

Instructions

  • Add the tahini and lemon juice to a high speed blender or the bowl of a food processor and process for about 30 seconds until whipped together. Scrape down the side of your blender or food processor if necessary.
  • Add in the beans, cilantro, garlic, spices and ¼ cups water and process until combined.
  • Add in the remaining ¼ cup of water and continue blending/processing until smooth and creamy.
  • Store in an airtight container in the fridge for up to a week.
