Add in the tahini and sweetener and mix until combined.
Using slightly damp hands, take about 1.5 - 2 tablespoons worth of dough and roll it into a ball. Continue this process until all the dough has been rolled into balls.
Store the bites in an airtight container in the fridge for up to two weeks.
