Made with chewy, sweet dates and rich dark chocolate, these sweet and salty Salted Chocolate Covered Peanut Butter Stuffed Dates are a quick and easy dessert for any occasion!
Remove the pits from the medjool dates and spread them apart.
Stuff each date with about 1 teaspoon of peanut butter.
Using a homemade double boiler (a heat safe bowl over a pot of boiling water), melt the dark chocolate with the 1 teaspoon of coconut oil until smooth.
Dip half of each peanut butter stuffed date into the chocolate and then sprinkle with sea salt. Place the dates on parchment paper and place them into the fridge to harden.
Store in a tupperware container in the fridge.
Notes
*If you want to cover the dates completely in chocolate, use about 2.5 oz. of dairy free dark chocolate.
