Cinnamon Oatmeal Cookie Dough Balls

Sweetened with dates and mini chocolate chips, these Cinnamon Oatmeal Cookie Dough Balls won't last long!

Ingredients

  • 1 cup oats
  • 1 ½ cups packed pitted dates*
  • ½ cup cashew butter
  • 1 teaspoon cinnamon
  • Pinch salt
  • ¼ cup mini chocolate chips optional

Instructions

  • Place all of the ingredients, except for the chocolate chips, into a food processor and process until a uniform, sticky dough forms. You'll know it's done when you can pinch some dough together between your fingers and it sticks together. If the dough is a little dry add 1-2 tablespoons of water or more cashew butter.
  • Mix the mini chocolate chips into the dough with a spoon.
  • Using damp hands, roll the dough into balls and store in an airtight container in the fridge.

Notes

*If you're using a drier variety of dates, you can soak them in hot water for 10 minutes. Then drain the water and use the softened dates
