Instructions
Preheat your oven to
350
°F
and grease an 8x8 baking pan. Set aside.
Prepare your flax egg by mixing together 1 tablespoon
ground flaxseed
and 3 tablespoons of water. Set aside to thicken.
In a stand mixer, beat together the softened vegan butter, white and brown sugar, vanilla extract and thickened flax egg.
Add in the gluten free flour, baking powder, salt and spices and mix until combined, scraping down the sides of the bowl if necessary.
Stir in the processed gluten free oats and ½ cup of mini chocolate chips.
Pour the batter into your prepared baking dish and even it out with a spatula. Sprinkle more chocolate chips over the top if desired.
Place the pan in the oven and bake for 20-25 minutes or until the edges start to turn golden brown.
Remove the pan from the oven and allow the blondies to cool completely before cutting into 16 squares.

*If you don't have gluten-free quick cooking oats, you can easily process normal gluten-free rolled oats into quick outs by using a
food processor
