Ingredients

  • 1 flax egg 3 tablespoons water + 1 tablespoon [ground flaxseed]
  • ½ cup vegan butter soft
  • cup white sugar
  • cup brown sugar
  • 1 teaspoon vanilla
  • ½ cup gluten free all purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon Cinnamon
  • ¼ teaspoon salt
  • teaspoon nutmeg
  • 1 cup gluten free quick oats
  • ½ cup dairy free mini chocolate chips + more for topping

Instructions

  • Preheat your oven to 350 °F and grease an 8x8 baking pan. Set aside.
  • Prepare your flax egg by mixing together 1 tablespoon ground flaxseed and 3 tablespoons of water. Set aside to thicken.
  • In a stand mixer, beat together the softened vegan butter, white and brown sugar, vanilla extract and thickened flax egg.
  • Add in the gluten free flour, baking powder, salt and spices and mix until combined, scraping down the sides of the bowl if necessary.
  • Stir in the processed gluten free oats and ½ cup of mini chocolate chips.
  • Pour the batter into your prepared baking dish and even it out with a spatula. Sprinkle more chocolate chips over the top if desired.
  • Place the pan in the oven and bake for 20-25 minutes or until the edges start to turn golden brown.
  • Remove the pan from the oven and allow the blondies to cool completely before cutting into 16 squares.

Notes

*If you don't have gluten-free quick cooking oats, you can easily process normal gluten-free rolled oats into quick outs by using a food processor
