Ingredients

  • ¼ cup fresh lemon juice
  • ¼ cup tahini
  • 15 ounces chickpeas drained and rinsed
  • 1 teaspoon minced garlic
  • 3 chipotle peppers in adobe sauce
  • 1 tablespoon adobo sauce
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt
  • 3 tablespoons water

Instructions

  • Add the lemon juice and tahini to a small food processor or a high speed blender and blend until a whipped paste forms.
  • Add in the remaining ingredients and blend until completely smooth, scraping down the sides of the processor/blender if necessary. If the mixture is too thick to blend, add in another tablespoon of water.
  • Taste and add more adobe sauce or spices if desired.

Notes

Pour the hummus into an airtight container and store in the fridge for up to a week.
