Ingredients

  • 6 green apples peeled if desired, cored and chopped
  • ¼ cup brown sugar
  • 1 tablespoon cinnamon
  • 1 box yellow or vanilla cake mix around 350 grams
  • 8 tablespoons vegan butter

Instructions

  • Preheat your oven to 350 °F and grease a 9x13 inch baking dish. Set it aside.
  • Peel, if desired, core and chop up the apples into bite size pieces.
  • Place the apples into the baking dish and sprinkle over the brown sugar and cinnamon. Stir to combine and then spread the apples back out into an even layer.
  • In a mixing bowl, cut the vegan butter into the cake mix. I like to do this with my hands until a crumbly mixture forms. Sprinkle this evenly over top of the apples.
  • Bake for 35-45 minutes or until golden brown and bubbly.
  • Serve warm with dairy-free ice cream if desired!

Notes

While I'll honestly be surprised if you have any leftovers of this cake after serving it, you can definitely save any leftovers for later. I recommend storing it in an airtight container in the fridge for up to a few days.
To reheat, simply scoop out the amount you want to enjoy and heat it in the microwave for about 30 seconds or until warmed through.
