Vegan Pumpkin Pie Overnight Oats

Oats, chia seeds and pumpkin puree soak overnight in cinnamon-spiced milk to creamy these creamy Vegan Pumpkin Pie Overnight Oats!

  • In a mason jar or sealable container, stir together the oats, chia seeds, spices and salt.
  • Add in the non-dairy milk, pumpkin puree and maple syrup and stir well until everything is combined and there are no clumps of chia seeds.
  • Seal the jar and store it in the fridge overnight or at least for 4 hours.
  • Once the oats have soaked you can enjoy them straight out of the jar or transfer them to a bowl and add your favorite toppings!

Notes

*If you don't have pumpkin pie spice, feel free to use a mixture of cinnamon, ground ginger and cloves. Alternatively you can make your own homemade pumpkin pie spice which I share how to do in the blog post.
